The Paris Chapter invites you to discover cocoa and its origins in the company of Victoire Finaz, chocologue. Through the tasting of different chocolates, our group will rediscover this “aliment des dieux” in all its forms and textures.
Born into a family of Lyonnais chocolatiers and a passionate cruncher from an early age, Victoire Finaz wrote a thesis on “Chocolate expertise: tasting and sensory evaluation”, in the process meeting and training with some of the greatest Parisian chocolatiers. She then set off to visit cocoa plantations in Bolivia, Mexico and Guatemala, and on her return specialized alongside Pierre Hermé at the Ferrandi school.
Victoire invented her trade and became a “chocologue”, an expert in cocoa and chocolate. She creates her own chocolate recipes, and launches her own chocolate brand, called Les Carrés Victoire.
Building on her expertise in chocolate, she created the École de Chocologie et du Goût. Amateurs and professionals alike have access to a unique and original training program on cocoa and chocolate.
